Pumpkin Pecan Scones

Bake at 400F for 13-15 minutes.  Makes 12 wedges.

Recipe Ingredients

  • 2 ¼ cups all purpose flour
  • ¼  cup brown sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼  tsp salt
  • 1 ½ tsp pumpkin spice
  • ½ cup chopped pecans or walnuts
  • 1 large egg
  • ½ cup margarine
  • 1/3 cup buttermilk
  • ½ cup canned pumpkin

Recipe Method

  1. Preheat oven to 400F. 
  2. In a mixing bowl combine flour, brown sugar, baking powder, pumpkin spice, baking soda and salt.  With a pastry blender cut in the ½ cup chilled margarine until mixture resembles coarse crumbs.  Now add chopped nuts.  Make a well in the centre of by mixture; set aside.
  3. In another bowl, combine egg, pumpkin and milk.  Add egg moisture all at once to dry mixture.  Using a spatula, stir until moist.
  4. Turn out dough onto a lightly floured surface.  Quickly knead dough by folding and pressing gently for 10 – 12 strokes or until smooth.  Divide dough into two balls.  Pat into 8 inch circles and cut into six wedges each.
  5. Place on an ungreased baking sheet..  Bake 13-15 minutes until lightly browned.  Let cool and garnish with icing sugar.
