Bake at 400F for 13-15 minutes. Makes 12 wedges.
Recipe Ingredients
- 2 ¼ cups all purpose flour
- ¼ cup brown sugar
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 ½ tsp pumpkin spice
- ½ cup chopped pecans or walnuts
- 1 large egg
- ½ cup margarine
- 1/3 cup buttermilk
- ½ cup canned pumpkin
Recipe Method
- Preheat oven to 400F.
- In a mixing bowl combine flour, brown sugar, baking powder, pumpkin spice, baking soda and salt. With a pastry blender cut in the ½ cup chilled margarine until mixture resembles coarse crumbs. Now add chopped nuts. Make a well in the centre of by mixture; set aside.
- In another bowl, combine egg, pumpkin and milk. Add egg moisture all at once to dry mixture. Using a spatula, stir until moist.
- Turn out dough onto a lightly floured surface. Quickly knead dough by folding and pressing gently for 10 – 12 strokes or until smooth. Divide dough into two balls. Pat into 8 inch circles and cut into six wedges each.
- Place on an ungreased baking sheet.. Bake 13-15 minutes until lightly browned. Let cool and garnish with icing sugar.
