Baked Berry French Toast with Lemon Compote

Berry French Toast
A decadent and simple show stoppers! Baked Berry French Toast, drizzled with warm lemon compote. Serves 4.

Recipe Ingredients: for French Toast

3 eggs
1 cup cream or milk
1 tbsp maple syrup
¼ tsp poppy seeds

6 slices french bread, cut into ½" cubes
½ cup fresh berries (rasp.black, blue)
4 tbsp cream cheese (1 per ramekin)

Recipe Ingredients: Lemon Compote

1 egg
¾ cup sugar
4 tbsp lemon juice
zest 1 large lemon
1 tbsp butter

Whisk together first 4 ingredients and cook over low heat, stirring constantly. After sauce begins to thicken, stir in butter just to combine. Serve warm over french toast

Recipe Method

The night before:

  1. Grease/Pam four 8 ounce ramekins (4" round)
  2. Line bottom of half of ramekins with bread crumb mixture
  3. Cover with 1 tbsp creamcheese each
  4. Cover with berries and remaining breadcrumbs
  5. Let sit overnight in refrigerator

In the morning:

  1. Bake at 350F for 25-30 minutes or until puffy and golden
  2. Remove french toast from ramekins by taking a spatula and going around the outer edge of the cup and then slightly lifting the bottom so that it easily comes out of cup with turned upside down
  3. Turn out onto a place, dust with icing sugar
  4. Top with a sliced strawberry fanned and then drizzle with lemon compote
